Margarita Lime Cupcakes

  • Betty Crocker White Cake Mix

  • White Chocolate Pudding Mix

  • Jose Cuervo Classic Lime Margarita mix with Tequila

  • 4 Whole Eggs

  • Vegetable Oil

  • Fresh Lime Juice

  • C&H Powdered Sugar

  • Lime

Thick wine glasses–I bought mine at the Dixon Dollar Tree

Preheat oven to 325.

Blend together 4 eggs, Cake Mix, pudding mix, 1/3 cup vegetable oil, and 1 1/4 cups margarita mix.  Prepare each glass with cooking spray and fill with 1/3 cup of batter.

Bake on cookie sheet for ~23 minutes.  Cool completely.  Use wet, then dry paper towels to clean excess spray on inside of glass.

Icing:

Use desired amount of powdered sugar (1 cup per 5 glasses) with fresh lime juice to make a thin glaze.  Poke several holes in the top of each cupcake and pour glaze on top.  I used a decorating bag with a coupler and tip 7 to control the flow.

After Icing sets, dip each rim in lime juice and then sugar, garnish with lime slice.

I also took a small amount of buttercream icing (recipe on this site) thinned with lime juice and added a small swirl with a tip 21 on top.

Sprinkle with Disco Dust.
