Double Cookie Caramel Brownie Cupcakes

  • 1 cup butter, room temp
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups chocolate chips


  • 1 package of Oreo cookies (double stuff)
  • 1 package of brownie mix (to be prepared as directed on the box)
  • Dulce de leche

 

Line cupcake pan with cupcake liners.

 

Cream butter, sugars, and vanilla.  Add eggs and mix well.  Add the flour, baking soda and salt and continue to beat until well combined.  Fold in the chocolate chips.

Scoop  one Pampered Chef mini scoop (1 Tbsp) of the cookie batter  in each cup.

Press one double stuff Oreo cookie on top.

Add a dollop of Dulce de leche on top of Oreo.

Scoop one Pampered Chef medium scoop (2 Tbsp) of brownie mix over top.

Bake at 325° for ~ 18 minutes.

Makes 24 cupcakes.

 

You will have excess cookie batter; enough to make an additional 24 cupcakes by doubling the brownie mix and Oreo cookies or to make excess batter into cookies, scoop onto parchment lined cookie sheet and bake at 375° for 9-11 minutes.
